california rolls, and diet philidelphia rolls (meatless sushi), carrot sticks, broccoli, cauliflower, and cellery with a spinach dip. also vegetable dumplings make good finger foods
Hummus is good with baked pita chips and veggies.
All you got to do is buy a veggie tray with a variaty of veggies.
You could also leave out a bowl of fruits. You could make something that’s like a pastrie full of apples or pies sumthing like that. temptation doesn’t hurt once in a while.
I’d go for salsa rather than fatty dips like hummus. You can also make a low cal dip by blending silken tofu with onion soup mix or your own blend of spices. Serve with crudites and baked pita chips. Vegetable sushi is also a good idea, as is bruschetta. If it’s a more formal occasion, a blended soup could be nice. For more substantial fare, you can try veggie and/or tofu kebabs. Sticking with the kebab idea, for sweets, fruit kabobs drizzled in fruit syrup are yummy, but you can also make something like low fat brownies or cupcakes for a more indulgent choice. Since they’re already in single serving size, it’ll be easier for her to control her intake (as long as you don’t make too many!) Check out this website for more ideas and recipes:
Other than what’s already been suggested, I would reccomend that if are going to serve sour cream with the chips (I also reccomend whole grain), salsa and guacamole and cheese with the salad, put them separate. There are people who might be staying away from cheese and sour cream becuase of the fat issue. There might be a vegan or two there, as well. Also, some people, like a friend fo mine, just doesn’t like cheese.
Also, for a cake, try the following. I take it to potlucks and get compliments on it. I also use whole wheat flour instead of white, and substitute apple sauce for the oil, so it’s fat free. Healthy chocolate cake. Yay.

6 tablespoons cocoa (100 grams)
2 teaspoons baking soda (10 cc’s = 10 ml)

2 teaspoon vanilla (10 cc’s)

Mix the dry ingredients. Add the wet ingredients. Stir until smooth. Bake at 350 degrees for 30 minutes. Makes two layers of a two-layer 9-inch or 8-inch round cake, or one small sheet cake. When cool, frost it.
Frosting:
Chocolate Frosting/Glaze
Ingredients (use vegan versions):
1 cup of sugar
1/2 of a teaspoon of vanilla extract
1/2 of a cup of cocoa powder
2 tablespoons plus 2 teaspoons – 3 tablespoons of vanilla soy milk
Directions:
Mix all ingredients. Use more soymilk for glaze, less for frosting.
For chocolate-mint: add some peppermint extract, you can add less vanilla if you want. Probably 1/8 of a teaspoon, I have never measured, all I know is it is a very small amount, just a couple drops or so.

You can buy whole grain tortilla chips, get a bar of low fat or fat free cream cheese, and pour salsa over it. Soooo goooood.

SNACKS: guacamole but with veggies for dippers rather than chips, cheese plate. um you can serve other stuff for the guests unless you’re trying not to temp the bride, humous…whoo a whole middle-eastern persian theme is good. loads of dips like babaganoush(roasteggplant) and hummous.
MEAL: big *** salads with cheese, there are some really yummy hearty ones that are not the annoy ‘veggie’ option that makes us veggies say ‘is that all’. some nice arugula, goat cheese and pears…. check out epicurous.com or foodtv.ca for salad ideas… or casseroles, curried stews or veggie chili.
if she is trying to fit into a dress, the carbs are what she needs to stay away from. serve sugar free soda as a liquor mix, white wine rather than red… no beer. if you’re going to do dessert then opt for fruit (yes i know they’re carbs but they’re good carbs) and if you want to do chocolate, use DARK, less sugar. maybe a fondue and if you don’t want chocolate, don’t dip.
How about a veggie platter carrots, celery, broccoli, cauliflower and a fat free dip, there are good ones out there!
Or try a fruit platter, cantalope, watermelon, strawberries, etc.

There are also Fat free puddings, the jell-o fat free chocolate is amazing!!!mmmmmm it would be a nice little guilt free treat!!!

Start with some beef broth with bacon bits. Next, you can have some lunch meats on crackers. Next for the main course have pork, beef, chicken, turkey, veil, duck and venison all smashed into one. And then for desert, have meat pie.
Turkey, chicken, fish grilled or baked. tossed salad with fruits like Mondrian orange, sliced peaches, stuffed bell pepper use ground turkey for meat. chicken broth with multi vegetables, broccoli, sugar snap peas, chives, carrots, cauliflower, tomatoes, asparagus, rice, any vegetable include will make this a light, tasty, and satisfying meal. fruit dips, wheat crackers topped with sliced veggies and cheese.
