Capsicum onion pickle

- Ingredients
- 1 red capsicum, halved, deseeded, thinly sliced
- 1 yellow capsicum, halved, deseeded, thinly sliced
- 1 bunch spring onions, ends trimmed, cut into quarters
- 125ml (1/2 cup) white wine vinegar
- 125ml (1/2 cup) hot water
- 1 1/2 tbs coriander seeds
- 1 1/2 tbs caster sugar
- 1/4 tsp salt
- 1/4 cup loosely packed fresh continental parsley leaves
Method
Place the capsicum, onion, vinegar, water, coriander seeds, sugar and salt in a medium saucepan and bring to the boil over medium-high heat. Reduce heat to medium and simmer, stirring occasionally, for 18-20 minutes or until capsicum and onion soften. Remove from heat. Transfer to a heatproof bowl. Sprinkle with parsley leaves and serve immediately.
