Capsicum onion pickle

    Ingredients
  • 1 red capsicum, halved, deseeded, thinly sliced
  • 1 yellow capsicum, halved, deseeded, thinly sliced
  • 1 bunch spring onions, ends trimmed, cut into quarters
  • 125ml (1/2 cup) white wine vinegar
  • 125ml (1/2 cup) hot water
  • 1 1/2 tbs coriander seeds
  • 1 1/2 tbs caster sugar
  • 1/4 tsp salt
  • 1/4 cup loosely packed fresh continental parsley leaves

Method
Place the capsicum, onion, vinegar, water, coriander seeds, sugar and salt in a medium saucepan and bring to the boil over medium-high heat. Reduce heat to medium and simmer, stirring occasionally, for 18-20 minutes or until capsicum and onion soften. Remove from heat. Transfer to a heatproof bowl. Sprinkle with parsley leaves and serve immediately.
