Ginger toffee apples

    Ingredients
  • 1 x 15g pkt sesame seeds
  • 1L (4 cups) iced water
  • 2 tbs plain flour
  • 2 granny smith apples, peeled, cored, each cut into 8 wedges
  • 300g (1 1/3 cups) caster sugar
  • 100ml water, extra
  • 5 tsp vegetable oil
  • 1 tsp ground ginger

Method
Line a cooking tray with cooking paper. Sprinkle sesame seeds over tray. Place iced water in a bowl. Place flour on a plate. Lightly toss apple in the flour and shake off excess.
Combine the sugar, extra water, oil and ginger in a saucepan over medium-high heat. Cook, stirring occasionally, until the sugar dissolves. Bring to the boil. Simmer for 12-15 minutes or until golden brown. Remove from heat. Use metal tongs to dip apples pieces in the toffee mixture, then in the iced water.
Place ginger toffee apples on the prepared tray and roll in the sesame seeds. Serve immediately.
