Crispy crepe triangles with yoghurt and strawberries

    Ingredients
  • 2 frozen crepes, just thawed
  • Olive oil spray
  • 180g (2/3 cup) vanilla yoghurt
  • 6 strawberries, washed, hulled and quartered

Method
Preheat oven to 180°C. Line a cooking tray with non-stick cooking paper. Lightly spray both sides of crepes, with olive oil spray. Cut each crepe into 10 wedges. Place wedges, in a single layer, on the lined tray. Bake in oven for 4-5 minutes each side or until crisp and golden. Set aside to cool. Place yoghurt in a small bowl. Place the bowl in the centre of a serving plate. Arrange the strawberry and crepe triangles around the yoghurt.
