Beef fajitas

    Ingredients
  • 2 garlic cloves, crushed
  • 1/4 cup chopped fresh coriander leaves
  • 2 teaspoons ground cumin
  • 600g beef rump steak, trimmed
  • 1 1/2 tablespoons vegetable oil
  • 1 medium red capsicum, sliced
  • 1 medium yellow capsicum, sliced
  • 1 large red onion, sliced
  • 8 flour tortillas, warmed
  • Fresh coriander leaves, to serve

Method
Place garlic, chopped coriander, cumin and steak in a bowl. Add half the oil. Season with salt and pepper. Turn to coat.
Heat remaining oil in a large frying pan over high heat. Add steak. Cook for 3 to 4 minutes each side for medium or until bakeed to your liking. Stand, covered, for 5 minutes. Thinly slice.
Meanwhile, bake capsicums and onion over high heat for 5 to 7 minutes or until browned and tender. Divide beef, vegetables and coriander leaves between tortillas. Roll up to enclose filling. Serve.
