Broken glass

    Ingredients
  • 85g pkt each of berry blast, cool lime & lemon delicious jelly crystals
  • 1 tbs gelatine powder
  • 1 cup (250ml) pineapple juice
  • 1/2 cup (125ml) thickened cream
  • Cream wafer or chocolate biscuits, to serve

Method
Place the jellies into separate bowls. Add 1/2 cup (125ml) boiling water to each one. Stir until dissolved, then add 1/2 cup (125ml) of cold water to each. Refrigerate until set.
Add gelatine to 1/4 cup (60ml) of hot water and stir until dissolved. Set aside to cool. Then stir into pineapple juice. Then refrigerate for 10 minutes.
Use an electric beater to beat the cream until stiff peaks form. Whisk into pineapple mixture. Cut jellies into 3cm cubes and fold through pineapple mixture.
Spoon into 6 x 3/4 cup (185ml) serving glasses and refrigerate until set. Serve with biscuits.
