Fresh fruit sundaes

    Ingredients
  • 250g strawberries
  • 2 tbs water
  • 2 tbs caster sugar
  • 1/4 medium pineapple
  • 1 large orange
  • 2 medium bananas
  • 1 passionfruit
  • 8 small scoops of vanilla ice cream

Method
Set aside 4 strawberries. Hull and halve remaining strawberries lengthways.
Combine water and sugar in a pan. Heat over medium heat until sugar dissolves and mixture comes to the boil. Add halved strawberries, cover and bake for 1 minute. Remove from heat, set aside to cool.
Using a hand blender or food processor, puree cooled strawberry mixture. Transfer to a jug and refrigerate for 30 minutes or until chilled.
Peel and chop pineapple, orange and bananas. Place into a medium bowl. Add passionfruit pulp and stir to combine.
To make sundaes – layer fruit salad, vanilla ice cream and strawberry sauce in serving glasses. Slice reserved strawberries, place on top of sundaes and serve.
