Caramelised apples with creamy rice

    Ingredients
  • 3/4 cup (150g) Doongara clever rice
  • 200g tub French vanilla lite fruche
  • 1 tsp Masterfoods ground nutmeg
  • 3 tsp polyunsaturated margarine
  • 1 pink lady apple, cut into 8 rings
  • 3/4 cup (185ml) light cranberry juice

Method
Place 1 1/4 cups (310ml) of water into a small saucepan with the rice. Bring to the boil. Reduce the heat to very low. Cover and bake for 12-15 minutes or until all the water has evaporated. Remove from the heat and set aside for 10 minutes. Stir through the fruche and 1/2 the nutmeg.
Meanwhile, melt the margarine in a large non-stick frying pan over a medium heat. Add the apple rings and sprinkle with the remaining nutmeg. Cook for 4-5 minutes.
Add the cranberry juice and bake for 5 minutes or until apples are tender. Divide the rice among serving plates. Top with the apple and any remaining pan juices to serve.
